Oak Roasted Salmon is freshly filleted salmon, lightly cured and kiln roasted in hot oak smoke with or without a peppercorn coating.  Gravadlax is made with the same delicious salmon fillets, sweet cured with fresh dill and pressed - no smoke involved here!  The smoked salmon and smoked mackerel pates are made by our friends at Patchwork in North Wales - simply scrummy.  Supplied to us frozen to ensure perfect quality and 10 days fridge life once they arrive with you.

We use only traditional curing methods with no artificial flavourings, additives or preservatives and our smoking process involves only smoldering welsh oak smoke. The fresh salmon we buy is reared in deep, fast currents.  Sourced sustainably from Shetland, where the need to preserve its pristine waters and the fact that quality welfare equates with quality eating is well understood.

We also undertake commission smoking of fishermen's fish.  For more information - click here
