J Laurens Le Moulin Brut
This Clemant - Methode Champagnoise from Limoux in Southern France is excellent. Made mainly from the indigenous Mauzac grape, it is made in the same way as Champagne and aged for over a year in bottle (unlike Prosecco which takes about 3 weeks)
Showing a fine mousse in the glass (meaning delicate bubbles as opposed to airy Angel Delight!) and characteristic toasty yeast aromas, boosted by fuller fruit and more structure
than the Brut Selection. Rich but elegant, with classic baked biscuit flavours and welcome burst of acidity on the finish.
