Our favourites from Trealy Farm, locally produced free-range charcuterie. Wonderful air-dried ham, "Coppa" made from marbled pork shoulder cuts cured with Rosemary and aromatic carpaccio made from wild venison.
Serve with sun-dried tomatoes, olives, feta cheese, and other Mediterranean favourites. Also delicious with oven-roasted shallots and a balsamic dressing or as a canape with cream cheese and a sprinkle of Welshman's Caviar.
