We receive deliveries of fresh, whole gutted trout from ChalkStream to create this wonderful smoke. The fish is dry-cured with just salt, we don't add any sugar so that we preserve the natural taste and let the flavours of the fish shine through. The whole sides are then gently smoked over sustainable Welsh oak and hand-sliced before packaging.
