Welshman’s caviar is handpicked laver seaweed from the Pembrokeshire coast which has been dried and toasted for a unique depth of flavour, capturing vitamins and mineral goodness from the sea….  The toasted laver flakes are fantastic as a garnish for fish dishes or a sprinkle on top of your scrambled eggs or bacon butties as well as in soups and stir-fries as well.

It costs, on average, £5 to plant and maintain one tree for 12 years in this area (£6 with fencing)…. BMS will match fund each £2 contribution made by you, to tend a tree to a self-sustaining age & stage…. 

As a family, we are committed to planting a thousand trees as a measure to offset unavoidable food miles, plastic and energy use at BMS…. The plan is to plant up the top ends of our 3 small fields with mixed hardwoods including plenty of Chestnut, which can be managed by coppicing in the future….  Also, to replenish our wonderful ancient hedgerows creating wider, thicker and more effective wildlife corridors….

So far we have raised funds to plant over 600 trees….  Let’s try to double that in 2024?!

Our famous Welsh Dragon Sausage is a pork, leek and chilli sausage made by our local butchers…. Hot-smoked for even more flavour!

Ready to eat, it is a great nibble with drinks or a delicious addition to a cold meat platter…. But we just love to cook with it – simply slice, re-heat to sizzling and toss into omelettes, salads, pasta, soups or stews!

“Casablanca Valley is hugely influenced by its proximity to the cool breezes which blow in of the chilly Pacific Ocean…. The vineyard soils are alluvial in origin, with sandy textures, high permeability, whose shallow depth restricts yield…. These cooler temperatures and poor soils, in consequence, give great character in both flavour and aroma, especially for aromatic white varieties like Sauvignon Blanc…. The landscape generally consists of rolling hills that rise toward the east and the Coastal Mountains…. The poor, shallow soils are alluvial in origin with sandy loam textures, good permeability, and relatively low yields with respect to other Chilean wine regions…. Cool climate conditions allow the fruit to ripen more slowly, resulting in grapes with a tremendous concentration off aromas and flavours in white varieties such as Chardonnay, Sauvignon Blanc, and others…. The grapes that went into this wine were hand picked during the first week of March, when the fruit had reached the desired level of ripeness…. The fruit came from the Casablanca estate, where the vertically positioned vines produce an average yield of 11 tons per hectare…. Fermentation took place with selected yeasts in our Maipo Valley winery…. Temperatures were carefully managed to remain cool, with pumpovers and delicate lees stirring to reach the desired results…. The wine was fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle….”

“The Colchagua Valley in Chile extends from San Fernando in the north to Chimbarongo in the south…. The climate is Mediterranean, and the area receives winds from the south and morning fog…. Springs are frost-free, and summers are very warm, which encourages proper ripening…. Summers are hot but with cool night temperatures…. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development…. The grapes were handpicked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract more fruit characteristics…. Alcoholic fermentation took place at 25º–28ºC (77º–82ºF) with pump-overs determined by daily tastings through the end of the process…. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins…. Malolactic fermentation took place naturally…. 20% of the wine was aged in French oak for 6 months and then blended for a more complex character….”

“The Colchagua Valley extends from San Fernando in the north to Chimbarongo in the south…. The climate is Mediterranean, and the area receives winds from the south and Môrning fog…. Springs are frost-free, and summers are very warm, which encourages proper ripening…. Summers are hot but with cool night temperatures…. The soils are medium to very deep, of alluvial origin, and have a silty-loam texture that allows for good vine development…. The grapes were hand picked in late April and early May and submitted to a week-long pre-fermentation cold treatment at 8ºC (46ºF) to extract Môre fruit characteristics…. Alcoholic fermentation took place at 25ºC (77ºF) with pumpovers determined by daily tastings through the end of the process…. A post-fermentation maceration followed, and then the wine was devatted, separating the free-run wine from the skins…. Malolactic fermentation took place naturally…. 20% of the wine was aged in French oak for 6 months and then blended for a Môre complex character….”

“Great cider is a timeless joy to us at Apple County…. Our cider is made from a single variety of bitter-sweet apples all grown in local orchards…. We approach cider-making with all the skills and reverence of a traditional winemaker, allowing the distinctive flavours of each variety to develop through a slow, cool fermentation….”

The apple trees at Whitehouse Farm were planted by Ben’s stepfather Jimmy in the 60’s who grew apples under contract to a national cider-maker…. Jimmy latterly experimented with making his own real cider and encouraged Ben to join him…. In 2008 Ben answered his calling and decided to move back to the family farm to become a full-time cider maker, Ben is incredibly passionate about cider and has always been a cider-drinker, in 2014 Apple County Cider was born….

Our famous Welsh Dragon Sausage is a pork, leek and chilli sausage made by our local butchers…. Hot-smoked for even more flavour!

Ready to eat, it is a great nibble with drinks or a delicious addition to a cold meat platter…. But we just love to cook with it – simply slice, re-heat to sizzling and toss into omelettes, salads, pasta, soups or stews!

And just in case you are wondering – we are really sorry but Dragon Sausage doesn’t contain any dragon meat – just pork! 

 

Pink-fleshed rainbow trout traditionally brined and hot-smoked whole before hand-filleting…. Deliciously delicate in flavour and texture…. (Not available in December)….

For a more robust flavour, our oak roasted Peppered Trout are cured and hot-smoked as fillets with a twist of crushed black pepper….

Serve with a wedge of lemon and creamed horseradish or a Waldorf winter salad of apple, celery and walnuts….
