Award Winning Smoked Chicken & Autumn Waldorf Salad

 

Our apple trees are brimming with very small but delicious fruit, and we still have salad leaves to harvest.  This classic recipe for Waldorf Salad works fabulously with our award winning Smoked Chicken as a starter for 4 -6 people or a main course for 2

 

Smoked Chicken & Autumn Waldorf Salad Recipe

 

Ingredients:

1 smoked chicken breast – sliced or chunks

Salad leaves of choice – washed

1 Spring Onion- sliced on diagonal

3 sticks of Celery – sliced on diagonal

4 radishes – thinly sliced

1 Apple – or 2 small

½ Lemon – Juiced

12 Grapes – black or green – halved

2 tbsp Walnuts – toasted and broken

2 tbsp Raisins

2 tbsp – Ready-made Mayo

1 tsp Dijon Mustard

1 tbsp Water

60g Perl las Blue Cheese – chopped (optional)

Apple Cider Jelly

To Prepare the base, line a serving platter, salad bowl or individual plates with a generous fresh salad leaves.

Slice the apple and place in a bowl with a squeeze of lemon juice to prevent browning.  Add the grapes followed by the celery slices  and chopped spring onion, with half the walnuts and raisins (If using, crumble in a little Perl Las Blue Cheese).

Mix the dijon mustard and mayonnaise. add a splash of water to loosen the consistency.  Pour most of the dressing over the vegetable, fruit and nuts mixture and gently toss to combine reserving a little  waldorf dressing for later.

Spoon the dressed fruit, vegetable and nut mixture over the prepared salad leaves.  Arrange the smoked chicken slices on top  of the salad.

To finish and garnish: sprinkle over the remaining walnuts, raisins and freshly sliced radishes. Drizzle the Smoked Chicken & Waldorf Salad with the reserved dressing and if desired, an extra crumble of blue cheese.
