Where It Begins Matters: Provenance and Sustainability at Black Mountains Smokery
Why Provenance and Sustainability Matter
At Black Mountains Smokery, we believe great food should always come with a great story.
Our smoked salmon has become a talking point across the UK not just for its flavour, but for the care, integrity, and responsibility behind it. And that story begins long before the salmon reaches our smokery.
Sourcing with Purpose
We are proud to use salmon sourced from Bakkafrost, a producer recognised for its commitment to sustainable aquaculture and high welfare standards.
Fish health and welfare are of the utmost importance to us. The supply chain we work within enables engagement across every stage of production, from freshwater and marine farming through to processing and sales, supporting traceability and supply chain transparency.
This integrated approach also extends to feed, an often overlooked but critical part of sustainability.
Sustainable Feed, Better Salmon
High-quality salmon depends on high-quality feed. That’s why Bakkafrost uses Havsbrún feed, produced within their own group, ensuring complete control and transparency across the supply chain.
This feed is:
- Rich in Omega-3
- Made with 100% natural pigment
- Free from GMOs, steroids, and hormones
- Certified to leading global standards including BAP, GlobalG.A.P, MSC, and IFFO RS
It’s a level of control and accountability that directly supports fish health, product quality, and environmental responsibility.
A Bigger Picture: Sustainable Protein
Aquaculture is increasingly recognised as a key solution to feeding a growing global population with nutritious, sustainable protein.
Farmed salmon stands out as one of the healthiest options available, naturally rich in omega-3 fatty acids, vitamin D, selenium, and essential B vitamins. But producing it responsibly is what truly matters.
Health, Welfare and Best Practice
At the core of Bakkafrost’s approach is an uncompromising commitment to fish welfare.
Their standards are not static they are continuously evolving. Through a fully integrated Fish Welfare Standard, they drive ongoing improvements at every stage of production. In fact, they are unique in having developed their own comprehensive welfare framework, ensuring best practice underpins everything they do.
That commitment aligns directly with our own.
Why Provenance Matters
Provenance isn’t a buzzword for us; it’s a responsibility.
We place great importance on understanding where our salmon comes from and ensuring it is sourced from producers who respect the environments they operate in. The pristine waters of the Faroe Islands provide ideal conditions for slow-grown, naturally robust salmon, and the care taken at source is evident in every slice.
At Black Mountains Smokery, we share that same respect:
For the landscapes we work in
For the communities we’re part of
And for the reputation of the food we produce
A Shared Commitment to Excellence
We are driven by passion, constantly refining our craft, raising our standards, and ensuring that every product leaving our smokery reflects the very best of what we do.
Sustainability isn’t an add-on. It shapes how we work every day:
Choosing responsible suppliers
Minimising waste
Honouring traditional smoking methods
Maintaining traceability across the supply chain
Communicating openly and transparently
Respect at Every Stage
From sea to smokery, respect is at the heart of everything.
Respect for the fish.
Respect for the environment.
Respect for the people behind the product.
We believe that when you combine carefully sourced salmon with, traditional smoking techniques, you don’t just create great food, you create something worth talking about.
