Autumn Flavours: Making the Most of the Season with Smoked Food

Autumn Flavours: Making the Most of the Season with Smoked Food

As summer slowly fades and the first signs of autumn begin to appear, there’s something rather lovely about the change of season.

The days may be getting shorter, but September brings its own kind of abundance. The Black Mountains begin to take on warmer colours, local hedgerows are filled with fruit, and our thoughts naturally turn towards comforting food, cosy evenings and gathering around the table.

For us, autumn is one of the most exciting times of year.

It’s when lighter summer dishes give way to richer flavours and heartier meals; and our traditionally smoked fish, meats and cheeses are perfectly suited to the season.

A New Season for the Table

Autumn is all about making the most of simple, seasonal ingredients.

A few slices of our smoked duck breast, for example, can transform a simple salad when paired with crisp apples, walnuts and a fruity dressing. Or try our smoked chicken alongside roasted vegetables and a warm grain salad for an easy autumn lunch.

And when the evenings become cooler, smoked haddock makes a wonderful addition to comforting dishes such as fish pie, chowder or a creamy gratin.

The beauty of smoked food is its versatility. You don’t need complicated recipes or dozens of ingredients. The smoking process has already added layers of flavour, meaning you can create something delicious with very little effort.

Bring Autumn’s Harvest to Your Plate

September is a wonderful month for seasonal produce.

Apples, pears, blackberries, damsons and other autumn fruits are perfect partners for smoked foods, particularly when you’re looking for that delicious balance between sweet, sharp and savoury.

Try pairing smoked duck, or serve Welsh cheese with apple and a spoonful of chutney for a simple but impressive sharing board.

A few good crackers, some artisan charcuterie and a selection of cheeses are all you need to create a relaxed supper that friends and family can help themselves to.

The Perfect Autumn Sharing Board

As the weather cools, entertaining moves indoors — but that doesn’t mean it has to become complicated.

A generous sharing board is one of our favourite ways to entertain.

Start with a selection of smoked meats and fish, then add some of our Welsh cheeses, artisan crackers, chutneys and preserves.

For something a little different, our Gourmet Duck  Pate with a slice of Orange combines rich duck with a fruity flavour and makes a delicious addition to an autumn grazing board.

Add some fresh fruit, nuts and warm crusty bread and you’ve got an easy feast that’s perfect for a relaxed evening with friends.

No complicated cooking. No last-minute panic. Just good food to share.

Comfort Food for Cooler Evenings

There is something about autumn that makes us crave comforting food.

When the temperature drops, dishes like creamy fish pie, warming soups, baked potatoes and hearty casseroles suddenly become much more appealing.

Smoked haddock is particularly versatile at this time of year. Its rich, smoky flavour works beautifully in traditional comfort dishes, while also being delicious simply served with potatoes and seasonal vegetables.

And because smoked haddock freezes exceptionally well, it’s also a useful product to have tucked away in the freezer for those evenings when you want something delicious without making an extra trip to the shops.

Don’t Forget the Cheeseboard

A good cheeseboard isn’t just for Christmas.

Autumn is the perfect season for enjoying Welsh and artisan cheeses with crisp crackers, chutneys and a glass of your favourite wine.

Try combining different textures and flavours ; a creamy cheese with something sharp and fruity, alongside smoked meats and a little sweetness from chutney or autumn fruit.

Put everything in the middle of the table and let everyone help themselves.

It’s simple, sociable and wonderfully relaxed.
