Our fresh ungraded North Sea haddock is gently cold smoked over oak without dyes or additives; pearly fleshed and sweet in flavour.
Best and most simply served when gently poached in milk with a bay leaf, parsley stalks and black peppercorns - the leftover milk then can make a lovely bechamel sauce! A great ingredient for kedgeree or fish pie.

I just want to say thank you so much for the smoked haddock - it looks yummy! I'll have it layered up with grated garden courgettes and shallots, a dab of cream and baked for 20 mins - fantastic!
