Sustainably sourced extra large rainbow are traditionally dry-cured with salt, we don't add any sugar so that we preserve the natural freshwater taste and let the flavours of the fish shine through. The whole sides are then gently smoked over sustainable Welsh oak and hand-sliced before packaging.
Enjoy the freshwater flavours ...Make delicious blini or simply enjoy with lemon, sour cream and a twist of black pepper.
