Our Sourdough Bread Loaf is baked by the Angel Bakery locally in Abergavenny….  This white sourdough is made from a mix of stoneground organic English wheats and roller milled English and European wheats…. The dough is fermented naturally and allowed to develop over several days delivering a light, open-textured, creamy and full flavoured white bread with an intense crust….

You can order for collection from our smokery shop….  Please order by Sunday pm for collection Wednesday & by Wednesday pm for collection Saturday…. Otherwise, bread is delivered fresh from our freezer….

Store sourdough bread is best when wrapped up and put in a bread crock, to help preserve its' shelf life…. Or you can wrap it up tightly in clingfilm or something similar and pop it in the freezer to enjoy later….

These amazing waffles have been baked by Tregroes in the Teifi Valley in West Wales since 1983…. They use only the best ingredients and nothing artificial…. The waffles have a beautifully soft texture and have a buttery toffee filling that oozes gold when warmed over a mug of hot coffee or tea…. They are the naughtiest tea-time snack and they are truly irresistible!….

Handmade Welsh Shortbread Biscuits made in Aberffraw on Anglesey…. Legend has it that centuries ago, a Welsh king was holding court in Aberffraw…. His wife was walking along a beach there and, seeing a pretty scallop shell, had a cake baked in its shape…. It is also thought that 13th Century Christian pilgrims to Spain pressed shortbread with scallop shells as a symbol of their journey……..

Here is a great slaw recipe to try that goes wonderfully with our Smoked Salmon:
 
For the SLAW –
– 1 large cucumber – sliced very thin (A mandolin slicer helps here but you can do it by hand)
– 3 eating apples skin on and thinly sliced 
– 1 large red onion thinly sliced thinly 
– 2 big spoons of capers 

Place in a bowl and add a good pinch of Halen Mon Sea Salt, stir and set aside for half an hour…. 

For the DRESSING –
– 1/3 Jones apple cider vinegar (any of the blends will work here) 

– 2/3 Fino olive oil
– 2 tsp honey
– 1 tbsp of horseradish or dijon mustard 

Mix and season as needed…. Dress the slaw with the dressing and serve over garlands of smoked salmon or Gravadlax….

Our Spiced Citrus Jelly is a fragrant friend made for Smoked Chicken and Smoked Duck, but try it with Smoked Mackerel and Smoked Salmon….  This jelly has more than a hint of citrus & chilli, beautifully balanced by fragrant sweetness……..

Serve on the side or melt into a vinaigrette to make a drizzle or dipping sauce….

It is a vibrant gold colour and full of goodness; GM free, high in omegas 3, 6 & 9 and vitamin E and low in cholesterol, 0….1%…. It makes a healthy alternative to traditional olive oils….

Wonderful for high temperature roasting and homemade mayo, and delicious for dressings, dips and drizzles! Once tried you'll definitely want to buy it 2….5l at a time and decant….

The Beetroot and Thyme is a perfect match with Oak Roasted Salmon salads on a sunny day, or in general, with any of our smoked fish…. It will also pair beautifully with smoked duck, either drizzled over a salad or as a dipping option for smoked duck canapes…. Similarly, the balsamic vinaigrette is a real stand-out salad dressing that balances well with all smoked foods on dressed salads and serving platters….
