Christmas Day has been & gone and suddenly it’s that awkard limbo period again when no one knows what day of the week it is and everybody is fed up with cooking! You’ve got a mountain of delicious leftovers in your fridge but don’t have a clue what to do with them?  Well at BMS we believe nothing should go to waste, especially when these scrumptious festive flavours can be transformed into quick and delicious meals that make hosting less stressful and your household more sustainable.  So whether you have leftover roasted veg, half a ham, or a few slices of smoked fish still waiting sadly in the fridge, here’s how to turn your Christmas leftovers into something utterly irrestible!!

1. Crispy Potato Röstis with Smoked Salmon

A luxurious breakfast is the easiest way to elevate your leftovers, and a wonderful excuse to enjoy more of our award-winning smoked produce!

Turn last nights mashed or roast potatoes into crisp and golden potato röstis. Top with a dollop of crème fraîche and a generous slice of our Smoked Salmon that you’re yet to have polished off! A fridge-clear-out turned mouth-watering breakfast.

2.Bubble & Squeak With Smoked Chicken

Sprouts are always neglected at the Christmas dining table so use them all up along with some cabbage or leftover veg to make a hearty bubble & squeak. Add leftover shredded Smoked Chicken for a boost of protein and that adds our signature smokiness to the dish.

3. Elevate the Classic Christmas Sandwich

The Christmas sandwich is iconic, but you can take it to another level with our delicious smoked ingredients:

Layer leftover stuffing, cranberry sauce and crisp salad with slices of our Smoked Duck or Smoked Chicken. Try it with our delicious Cranberry & Fig Chutney.

4.The Boxing Day Salmon & Beetroot Bagel

Spread cream cheese or whipped feta on a toasted bagel, add leftover roasted beetroot or our Sweet Beetroot Chutney and top with Hot Smoked Trout, Oak Roasted Salmon or Smoked Salmon.
It’s fresh, light and colourful and far better than anything you’d buy on the high street.

5.Hearty Leftover Pie with our Cooked & Honey Mustard Glazed Ham

Nothing says comfort quite like a golden-topped pie, and it’s one of the easiest ways to use up all the odds and ends left in your fridge.

Combine chopped Honey & Mustard Glazed Ham, roasted vegetables, and any stray pigs-in-blankets in a creamy white sauce or simple gravy. Pop the pie mixture into a baking dish, top with either leftover mashed potatoes or a sheet of ready-made puff pastry, and bake until bubbling and beautifully golden. Or switch it up and chuck in some leftover Smoked Haddock, Smoked Duck, Dry Cured Bacon or Smoked Chicken!

6.Creamy Pasta with Oak-Roasted Salmon or Smoked Chicken

When the fridge is still full but motivationto cook is at an all-time low, pasta is your best friend.

Flake leftover Oak Roasted Salmon into a pan with sautéed garlic, a splash of cream (or crème fraîche), lemon zest, and a handful of peas or spinach. Toss through cooked pasta and finish with cracked black pepper. Utterly delicious and and seriously simple to make.

7.Smoked Welsh Cheddar Fondue Feast

If you’ve got a selection of leftover cheese from your festive cheeseboard or even just a hefty chunk of Smoked Welsh Cheddar, then turn it into the ultimate gooey cheese fondue to create the perfect sharing dish for everyone to dive into.

Melt grated Smoked Welsh Cheddar with a splash of white wine (or stock), a teaspoon of mustard, and a touch of garlic until silky and indulgent. The smokiness adds a gorgeous depth of flavour that makes this fondue extra special.

Not sure what to dip into it?! Simply use up whatever you have lingering around from Christmas lunch, be it strips of our Honey Glazed Ham, Sourdough croutons or even roasted veg and potatoes.
